Taqueria Style Plant-Based Taco Night
- 1 Lb Soy Chorizo
- 4 Large Cactus Paddles
- White Onion finely chopped
- Fresh Cilantro finely chopped
- 2 Fresh Limes wedged
- 12-16 Small Tortillas
- Creamy Avocado Sauce
- Spicy Tomatillo Chile de Arbol Salsa
Cook chorizo according to directions. Mine is cooked with with 1/2 tablespoon of oil until cooked through. Drain on a couple of paper towels and set aside.
For the nopales I rub them with a bit of oil and sprinkle with seal salt. I heat up a cast iron skillet and cook until they are tender.
Warm the tortillas.
To assemble tacos add soy chorizo and nopales to the tortillas top with avocado sauce, arbol salsa, onions, cilantro and a squeeze of fresh lime juice. Don't forget the BEER and tortilla chips. Enjoy!
