Homemade Chicken Stock
Ingredients:
5 lb. chicken bones (backs, necks, feet, or wings)
2 lb. mirepoix, roughly chopped (16 ounces of onions, 8 ounces of carrots, and 8 ounces of celery)
Bouquet garni (parsley stems, a bay leaf, thyme, and black peppercorns): you can tie it together or wrap it in cheesecloth, but I don't since everything will be strained at the end
Filtered water
Instructions:
1. Place chicken bones in a large stock pot.
2. Add the mirepoix and bouquet garni to the pot.
3. Cover the ingredients with cold water.
4. Bring the pot to a simmer and skim the surface frequently for about 3 hours.
5. Strain the stock, cool it down, and store it in the refrigerator or freeze it for later use.
